I have maybe 100 cook books and I cook out of 6 of them. My mission this year is to cook out of a different one each week.
During lockdown I watched a lot of cooking content on YouTube. An embarrassing amount! One of my favourite channels was Bon Appetit and Molly was one of the stars and this is her book Cook This Book.
I’ve only attempted one other dish out of this book and it didn’t really work but there’s tons of recipes that tempt me (the black sesame shortbread, the pimiento cheese dip and the salty date and cheddar biscuits and the crispy chicken thighs with herby peas and fennel) but last week I went for the One Pot Chicken & Schmaltzy Rice with Lemon Yoghurt.
I didn’t follow the recipe exactly using less rice as there was only two of us so it slightly over cooked as my timings were out but the seasoning and garlicy and lemony bright yoghurt dressing were great. Plus doesn’t love anything cooked in chicken fat?
I will persevere with this book and attempt some of the baking next.
